Damson Liquor

500g (1 lb) washed damsons
500g (1 lb) sugar - white granulated
600ml (1 pt) vodka or gin

Prick the damsons very well with a sterilized needle to allow the spirit to penetrate. (Pass needle through a clean gas flame to sterilise it)

Put damsons in a jar or bottle with the sugar. Cover tightly and leave to stand for 2 to 3 days or until the juice runs freely.

Pour in the spirit and cover tightly. Leave in a warm place for about 2 months at least.

Strain, squeezing out as much of the juice as possible, pour into sterilised jar or bottles and cork or seal tightly.

This makes about 900 ml (1 1/2 pints).
